I finally kegged this up today (yea, I know - I'm the Lazy Brewer!) and it had a wonderful aroma. It went all the way down to 1.006, and came out at about 7.6% ABV. Looking forward to tasting it carbonated and cold:)

Yea, I'm with you! I was thinking of adding some Centennials at 4 mins, as well as dry hopping with them. They kinda need to be there, don't they? :)

When I first read the given name of this beer, I thought it was going to showcase the hop with that name and even possibly be a single hop beer...and while I think it is a great recipe and a good idea, I think there should be more of the "namesake" hop in the finish...I'm just sayin'!

This morning, the Hefeweizen had blown off enough that there was yeast goo filling half of a broiler pan I had put under the gallon milk jug I was using for as an air lock. Typical wheat fermentation:)

Awesome! Thanks for the feedback on Brew it Up:) I was a bit hesitant to hit Pyramid as they are just a bit too "macro" for me. I believe that Brew It Up brews on premises and Pyramid brings all of their beer in. For me, that's enough of a reason right there!

My wife and I really love Sacramento. If were were going to live in a larger city, Sacramento would be at the top of the list:) It seems to have the perfect mix of culture, nightlife, good ale, and city feel!

Great to see that central valley people are looking to our town to do their pub crawl. Having been a resident of Midtown Sac for a few years now I will tell you that the line up of beer you will find at Brew It Up is much more rewarding and interesting than that of Pyramid. They are both equally capable of hosting your group but Brew It Up has a much broader selection of beer brewed on location.

I live about 4 blocks from Rubicon and will agree with you all day that the quality of beer brewed by them is the best in the region.

The migration to a new WordPress theme is complete. It took some time to track down the things that were bugging me about the theme - as well as overcoming some PhotoShop weirdness for a couple of the graphics.

I'm happy with the new look...

After mellowing a bit, the CitraIPA has turned into a wonderful ale. There is no more cattiness in the aroma, and the flavor explodes with a tropical fruit - a mango like quality. It's very yummy!

We had an awesome brew day today! Thanks to Steve and Maggie for hospitality and post brew munchies (Wing Stop goodness!).

The black IPA turned out nice and dark, and we dropped a ton of simcoe and amarillo hops in to steep at the end of the boil. The wort had an aggressive IPA flavor, with just a tiny hint of roastiness from the Carafa added to the sparge. The Sinamar did its job.

I'm looking forward to tasting this IPA. It's going to be delicious!

Yesterday, I was a bit worried about the low temperatures (about 61 degrees) in the fermentation fridge, so I brought the carboys inside. They were still bubbling a bit, but just as a precaution, I swirled both carboys. This morning, on of the airlocks was shooting out little yeast balls! Seems that the yeast rousing and a bit extra warmth woke, up the fermentation big time.

The off-gassing aroma is still wonderful :)

After tasting the Citra IPA, I've discovered that they have similar properties to Simcoe hops. The ale has a cattiness very much like the single hop brew I did in the past with Simcoes.

It was a good brew day! I used the entire brick of Citra hops (with 5 ounces in reserve for dry hopping) in the brew and they have a unique aroma in the boil. Citrusy yet spicy. Very nice!

I pretty much hit my numbers. OG was 1.070 and the projected was 1.071, so all in all, a good day:)

I can't wait to taste this ale.
